Ingredients

Spiced Caramel Apple Filling
  • 6 large apples (combination of Honeycrisp and Granny Smith) peeled, cored, and sliced into 1/4-inch wedges
  • 1/3 cup dark brown sugar packed
  • 1/4 cup pure maple syrup
  • 2 tbsp unsalted butter melted
  • 1 tbsp fresh lemon juice
  • 1 1/2 tsp ground Saigon cinnamon
  • 1/4 tsp ground nutmeg
  • 1 1/2 tbsp cornstarch or arrowroot to thicken apple caramel juices
Golden Buttery Biscuit Oat Crumble
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned rolled oats
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar packed
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup (1 stick) cold unsalted butter cut into small cubes
  • 1/4 cup buttermilk or heavy cream

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Butter a 10-inch or 12-inch cast-iron skillet (or deep ceramic baking dish) generously.
  2. In a large bowl, toss the sliced apples with brown sugar, maple syrup, melted butter, lemon juice, cinnamon, nutmeg, and cornstarch until evenly glazed in amber spice syrup. Pour into the prepared cast iron skillet.
  3. In a separate bowl, whisk together flour, rolled oats, granulated sugar, brown sugar, baking powder, and salt. Add the cold cubed butter and cut in using a pastry blender or your fingertips until pea-sized crumbles form.
  4. Stir in the buttermilk or cream just until clumps of tender biscuit dough form. Scatter the crumble generously over the spiced apples in an uneven, rustic cobblestone pattern.
  5. Bake uncovered for 38 to 42 minutes until the spiced apple juices are vigorously bubbling around the edges and the biscuit crumble crown is deeply golden brown and crisp.
  6. Remove from the oven and let cool for 10 minutes so the caramel juices thicken slightly. Spoon warm into bowls and top immediately with a generous scoop of Madagascar vanilla bean ice cream!
