Ingredients

Buttery Shortbread Crust
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter cold and cut into cubes
  • 1/4 tsp fine sea salt
Spiced Apple Filling
  • 4 large Honeycrisp apples peeled, cored, and thinly sliced (about 5 cups)
  • 1/4 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp all-purpose flour for thickening juices
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp pure vanilla extract
Crispy Oat Streusel & Caramel Drizzle
  • 1/2 cup rolled old-fashioned oats
  • 1/3 cup dark brown sugar packed
  • 1/3 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 4 tbsp unsalted butter melted
  • 1/4 cup salted caramel sauce warm for drizzling
  • 1 pint vanilla bean ice cream optional for serving

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch round fluted tart pan with a removable bottom.
  2. Prepare the crust: In a medium bowl, combine flour, powdered sugar, and salt. Cut in cold cubed butter with a pastry cutter or clean fingers until a crumbly dough forms. Press dough evenly across the bottom and up the sides of the tart pan. Prick the bottom with a fork and bake for 12 minutes until set.
  3. Prepare apple filling: In a large bowl, toss thinly sliced Honeycrisp apples with granulated sugar, lemon juice, flour, cinnamon, nutmeg, and vanilla extract until every slice is coated in fragrant spiced syrup.
  4. Make oat streusel: In a small bowl, stir together rolled oats, dark brown sugar, flour, and cinnamon. Pour in melted butter and toss with a fork until coarse, clumpy crumbs form.
  5. Assemble and bake: Layer the spiced apples tightly in concentric circles inside the par-baked crust. Scatter the crunchy oat streusel generously over the apples, covering the top completely.
  6. Bake at 350°F (175°C) for 35 to 40 minutes until the apples are fork-tender and bubbling, and the streusel topping is deeply golden-brown and crisp.
  7. Cool for 15 minutes in the tart pan, then carefully remove the outer tart ring. Drizzle liberally with warm salted caramel sauce, slice into wedges, and serve warm with vanilla bean ice cream!
